Wine is singular in the food and beverage world in its capacity not only to withstand the vagaries of time, but in exceptional cases, to improve and evolve with age. But this requires ideal conditions spanning both winegrowing and storage; and even the most experienced tasters' "predictions" as to the evolution of certain bottles have much less to do with science than informed-guesswork.
This tasting will consist of a lineup of wine that has been resilient to time, each serving as a catalyst to the discussion of which wines benefit from age (and just as importantly, which don't), the sublime rewards of cellaring wine and how to strategically pursue this in the Canadian prairies.
Cancellation Policy: If you are unable to attend and call prior to one week of the event then we will give you a choice of either a full refund or store credit for the amount paid. If you call prior to three days of the event we will give you store credit for the amount paid. There will be no refund or credit given within three days of the event. You are more than welcome, however, to send another adult in your place.
